All are tasty and nutritious and so versatile you could easily add a salmon fillet or chicken breast if feeding a mix of dietary requirements. Virtually every recipe comes with a full-page picture, and the accompanying instructions are clear and easy to follow. This would also be a great book for students at uni. Favourite recipes include roasted cauliflower with chickpeas, spring greens, lemon and tahini; all-in-one sticky rice with broccoli, squash, chilli and ginger; and crunchy roast potato, artichoke and spring green hash with baked eggs.
